Wash the carrots thoroughly, peel them, and then grate them. Also grate the dried coconut.

Heat a large skillet or heavy-bottomed pan over medium-high heat. Add the ghee. Once the ghee is hot, add the bay leaves, then add the grated carrots. Sauté for 2 minutes. After 2 minutes, add the milk, stir to combine, and cover with a lid. Keep the heat at medium-high.

Note: I used a nonstick pan, but you can use any heavy-bottomed pan or skillet.

Remove the lid and stir occasionally. Add the grated dried coconut. Continue cooking, covered, until the milk is fully absorbed. Then add the sugar.

Stir well. After adding the sugar, the mixture will release some liquid. Cook until the liquid evaporates. Add the cashews, raisins, and crushed cardamom. Mix well. Your Gajar Halwa is now ready. Turn off the heat.
