Ingredients

2 servings
  • halfred cabbage shredded
  • 1baking potato cubed
  • halfapple of your choice
  • Mixed soffritto made with chopped shallot, carrot and celery
  • 2 tbspolive oil
  • 1 tspall spice
  • 500 mlvegetable or chicken stock
  • salt and pepper - quantities desired
  • 1 dashGreek yogurt seasoned with lime juice to serve

Steps

  1. 1

    In a pot start by adding the olive oil and your soffritto. Season with all spice and cook until soft. Add the apple, potatoes and the shredded cabbage.

  2. 2

    Let these vegetable brown lightly before covering with the stock. Simmer until soft and blend with an immersion blender. The consistency is very think, but yo could sieve to a more smooth soup.

  3. 3

    Serve with some sliced apples, roasted almonds and some fresh herbs.
