What do you do when you are left with half red cabbage??? The normal use might be roasted and topped with pesto for example, but I wanted to try something different and the temperature outside called for a bold, warm soup. And it looks great for the #veganuary contest

In a pot start by adding the olive oil and your soffritto. Season with all spice and cook until soft. Add the apple, potatoes and the shredded cabbage.

Let these vegetable brown lightly before covering with the stock. Simmer until soft and blend with an immersion blender. The consistency is very think, but yo could sieve to a more smooth soup.

Serve with some sliced apples, roasted almonds and some fresh herbs.
