Spiced baked chicken

My quest to perfect spicy chicken continues. Although I usually prefer to fry chicken unless it's whole, this time I put the thighs in the oven. It turned out great. The skin was crisp, the meat juicy, and the spice level warm but not burning. Feel free to bump up the cayenne to turn this into truly spicy chicken.

My quest to perfect spicy chicken continues. Although I usually prefer to fry chicken unless it's whole, this time I put the thighs in the oven. It turned out great. Combine the first seven ingredients plus half the cayenne. Toss the chicken with the spice blend until coated. Lay the chicken skin-side up on a foil-lined baking sheet and refrigerate for at least 2 hours.

Add the remaining cayenne plus a pinch of salt to a few tbsp veg oil. Stir to combine. Brush the oil on top of the chicken thighs.

Preheat your oven to 425 F and bake the chicken for 30 minutes or until the internal temperature reaches 165 F. Serve immediately.
