Ingredients

4 hrs

8 servings

2 cupssoaked for 24 hrs black beans
3/4 cupred lentils
1 canred beans
1bell pepper
1 cupcubed pumpkin
2pimento peppers
1large onion
1 tspgeera (cumin)*(increase if necessary)
1 1/2 tspsalt * (can be increased)
1 tbspthyme
1bay leaf
1/4 tspchili powder
1/2 tsppaprika
1/2 tspblack pepper
1 cancorn* (add before or after)
3 clovescrushed garlic
2 tbsptomato paste
2tomatoes diced
250 mlunsalted chicken or vegetable stock
Water to cover

Prep all vegetables by dicing. Add all ingredients to slow cooker. Mix well.

Cover ingredients with stock and water

Cover and cook.on high for 4 hrs
