Ingredients

8 servings
  • 2 cupssoaked for 24 hrs black beans
  • 3/4 cupred lentils
  • 1 canred beans
  • 1bell pepper
  • 1 cupcubed pumpkin
  • 2pimento peppers
  • 1large onion
  • 1 tspgeera (cumin)*(increase if necessary)
  • 1 1/2 tspsalt * (can be increased)
  • 1 tbspthyme
  • 1bay leaf
  • 1/4 tspchili powder
  • 1/2 tsppaprika
  • 1/2 tspblack pepper
  • 1 cancorn* (add before or after)
  • 3 clovescrushed garlic
  • 2 tbsptomato paste
  • 2tomatoes diced
  • 250 mlunsalted chicken or vegetable stock
  • Water to cover

Steps

  1. 1

    Prep all vegetables by dicing. Add all ingredients to slow cooker. Mix well.

  2. 2

    Cover ingredients with stock and water

  3. 3

    Cover and cook.on high for 4 hrs
