Easy Oil and Sugar-free Banana Cake Made with the Microwave

I wanted to make a simple and healthy oil- and dairy-free banana cake. I tried many variations in my quest to find a fluffy texture that was easy on the stomach. Great for busy mornings, when you are on a diet or when you don't feel so well. It makes good baby food too!

The cooking time will vary depending on your microwave, so check on it every 10 seconds or so. It's done when the surface has dried.
You can also cook it in the rice cooker. Let it cook twice on the fast setting. Recipe by HATIMITSU

  1. 150 gramsPancake mix
  2. 2Eggs
  3. 3 mediumBanana

Steps

    Mix the eggs and peeled bananas in a blender.

  2. 2

    Put the blended mixture in a bowl, and sift in the pancake mix. Fold it in with a spatula.

  3. 3

    Pour the mixture into a mould until about 80% full. Cover it loosely with plastic wrap, leaving a gap between the mixture and plastic, and microwave on high for 1 minute.

  4. 4

    Instead of pancake mix, you can use 150 g of cake flour and 1 1/2 teaspoons of baking powder. See.
