Ingredients

12 servings
  1. 1/2 cupApplesauce
  2. 1 cupMashed banana
  3. 1Banana for slicing
  4. 1 cupCooked quinoa
  5. 2 1/2 cupOld fashion oats
  6. 1/2 cupAlmond milk
  7. 1/4 cupHoney
  8. 1 tspVanilla extract
  9. 1 tspCinnamon
  10. 1Apple, peeled and chopped

Steps

  1. 1

    Preheat oven 375. Lightly grease muffin tin

  2. 2

    Cook quinoa

  3. 3

    Mix applesauce, mashed banana, almond milk, honey, vanilla extract in a bowl

  4. 4

    Mix dry ingredients in separate bowl. Slowly stir the wet into the dry until fully combined

  5. 5

    Peel, core, and chop apple. Mix apple chunks into bowl

  6. 6

    Fill each muffin cup to the top with quinoa mixture.

  7. 7

    Add banana slice or two to the top of each

  8. 8

    Bake 20-25 min

  9. 9

    Let cool 5 min
