I love pasta, and even more so Paccheri. Today it's time for "PACCHERI WITH POTATO CREAM AND SAUSAGE." A tasty, creamy, and very inviting main dish. It's very versatile, quick, and economical. You can naturally vary it by using bacon or speck instead of sausage, or even add mushrooms. There's something for everyone 😉

Ingredients

  1. For the potato cream
  2. About 2 cups potatoes (300 grams)
  3. About 3/4 cup Parmesan cheese (80 grams)
  4. As neededPotato cooking water
  5. To taste Salt
  6. To taste Olive oil
  7. For the sauce
  8. 1/2onion
  9. 1/2 clovegarlic
  10. 3sausage links
  11. To taste Salt
  12. To taste Olive oil
  13. To taste Parmesan cheese
  14. 8cherry tomatoes
  15. To taste Carrot
  16. To taste Brandy or white wine
  17. Pasta
  18. About 11 ounces Paccheri (320 grams)

Steps

  1. 1

    Peel the potatoes, cut them into pieces, and cook them in a pot with water. Once cooked, put them in a blender with the Parmesan cheese, olive oil, a pinch of salt, and a few tablespoons of cooking water. Blend until you reach a creamy consistency.

    Wash the cherry tomatoes and blanch them in boiling water for a few minutes, then peel and chop them. If the tomato skin doesn't bother you, you can skip this step. In a large pan, heat the olive oil, finely chop the onion, garlic, and carrot, and sauté. After a few minutes, add the crumbled sausage and brown it. Then deglaze with the Brandy and let it evaporate.

    Finally, add the cherry tomatoes, season with salt, and continue cooking for 6-7 minutes. Cook the Paccheri in plenty of salted water. When cooked, drain them, reserving a few ladles of water, and add them to the sausage pan. Mix well.

    Add the potato cream and a sprinkle of Parmesan cheese, and serve. Enjoy. 😋
