Watercress Soup 🥗
A simple, refreshing soup.
Steps

Slice the king oyster mushrooms in half and rinse them. Add them to a pot with about 4 cups water (about 1 liter). Rinse the watercress and cut into bite-sized pieces. When the water boils, season to taste and add the watercress. Stir gently.

Finally, slice the silken tofu into rounds and add to the soup. When the soup comes to a boil again, turn off the heat. This easy soup takes just 15 minutes to make and is light and delicious.
