Ingredients

  1. 3-4poblano peppers, sliced
  2. 1/3 cupchopped onion
  3. 1 clovegarlic
  4. 1ladle of oil
  5. 2 tablespoonsbutter
  6. 1/2 teaspoonpepper
  7. 1 teaspoonsalt
  8. 1 cupchicken broth*
  9. 1 cupmilk
  10. 1/2 cupcream or cream cheese
  11. 1 cupcorn kernels (optional)
  12. croutons or fried tortilla strips to taste (optional)

Cooking Instructions

    Melt the butter in the oil and sauté the onion with the garlic in a pot over medium heat for three minutes.

    Add the sliced poblano peppers along with salt and pepper.

    Add the chicken broth or water, cream, and milk, and heat for 5 minutes or until it boils.

    Cover the pot and keep heating for 10 minutes on low heat.

    Remove and blend everything from the pot until smooth.

    Return the cream to the pot and keep on low heat for 10 more minutes until it thickens.

    Boil a cup of corn kernels for 5 minutes on high heat, then strain and remove the water.
