Time to prepare a delicious creamy poblano pepper soup, perfect to complement a meal. Personally, I love to prepare chilaquiles or enchiladas with this type of cream. It yields 1 quart or 4 servings.
Cooking Instructions

Melt the butter in the oil and sauté the onion with the garlic in a pot over medium heat for three minutes.

Add the sliced poblano peppers along with salt and pepper.

Add the chicken broth or water, cream, and milk, and heat for 5 minutes or until it boils.
- 4
Cover the pot and keep heating for 10 minutes on low heat.
- 5
Remove and blend everything from the pot until smooth.
- 6
Return the cream to the pot and keep on low heat for 10 more minutes until it thickens.

Boil a cup of corn kernels for 5 minutes on high heat, then strain and remove the water.

Serve in a bowl along with tortilla chips or croutons.
