Chop your peppers, onion and sausage neatly, heat up your pot add vegetable oil, sauté some of the chopped onions, then add tomato paste, spices, and bay leaf

Fry the tomato paste till it is cooked and it looks like small clumps, then add chicken stock and water allow to boil.

When it is boiling add your basmati rice lower the heat and allow to cook, don't allow the rice to be dry before turning it off, leave a bit of sauce.

In another pan now sauté the remaining onions, cut sausage and meadly of peppers

Add sautééd vegetables to rice and combine, allow to simmer for 5 minutes, your jambalaya rice is ready!
