Moroccan Couscous with Seven Vegetables

Take a couscous pot. Add the beef, onion, tomatoes, and spices: turmeric, black pepper, ginger, salt, and olives.

Meanwhile, place the pot over heat, stirring until the ingredients are sautéed, then add a large amount of water and bring to a boil.

Add the vegetables to the pot: carrots, turnips, cabbage, chickpeas, and fava beans. Set aside the remaining vegetables until these are slightly cooked.

Take the semolina, add a small amount of water, and set aside to absorb the water. Then, loosen it with oil, place it in the steamer, and let it steam well. Afterward, pour it into a large bowl, sprinkle with water to absorb, and add a little salt.

Meanwhile, place the remaining vegetables in a pot, add crushed tomatoes and hot pepper.

Then, take the semolina, loosen it with a little olive oil, place it in the steamer to steam again, and cover it with a lid.

In the final stage, add the hot clarified butter. Then place the semolina in a large bowl or dish and drizzle with sauce.
