Chana Dal Halwa

Jibita Khanna
Jibita Khanna @Jibitakhanna

One of my favourite Halwa made with Chana Daal. I learnt this from my neighbor Didi. This Halwa along with Muscat Halwa is surely cooked in Calcutta/ Kolkata to celebrate the Islamic festival " Shab -E - Barat". As a kid used to wait eagerly for this Festival to relish the Halwa. As we grew eating it then one day I asked my neighbor Didi for the recipe. You must have strong hands to make if you are making in large quantity especially.

Chop the cashew, heat ghee in the kadai and fry the cashew first till they are light brown in color. In the same ghee add the Chana dal paste and bhunno or roast it till you get a nice roasted aroma and the ghee starts oozing out (it will take around 20 minutes in medium low heat), then add milk and cook for another 5 minutes or so.add the Cardamom powder, Mitha ithar, kewra water and rose water/ essence too.

Then add the mawa/ khowa/khoya and mix it properly and cook for another 3-5 minutes.then add the sugar and mix well, as the sugar melts the halwa will thin down a bit.bhunno it till the ghee starts oozing out.add half the cashew and mix well and your Halwa is ready to be served.put it in a serving bowl and garnish with the remaining cashew.I love when the halwa is warm.
