For the dough, combine the different flours, salt, and yeast. Gradually add the water while mixing and kneading at the same time. When the dough is ready, cover it and let it rest for 45 minutes in a lightly oiled (olive oil) bowl.

For the filling, mix the tahini with the sugar, cinnamon, honey, orange zest, and sesame seeds if desired.

Lightly flour your work surface to prevent sticking. Once the dough has rested, divide it into 8 equal pieces. Take the first piece and roll it out with a rolling pin into a square about 5 to 6 inches (12 to 15 cm) wide. (Don’t roll the dough too thin.) Place 1/8 of the filling in the center and fold all sides over to cover the filling. Flip it over and use the rolling pin to roll it out again into a similar square.

Carefully roll it up to form a long log. Stretch it gently to lengthen it further, then cut it into two equal pieces.

Take one of the two new pieces and roll it back and forth until the dough doubles in length. Then shape it into an S.

Take half of the S and fold it over the other half, pressing down gently with your palm.

Repeat the same process with the remaining dough pieces.

Bake at 350°F (180°C) for 20 minutes.
