Cut all the ingredients mentioned in the puree section roughly. Blend them together with some water to make a smooth puree.

Grate boiled potatoes in a bowl. Then add cornflour and salt to it. Mix well and make dough of potatoes using some oil.

Take paneer in a bowl and add onion, green chili, coriander to it. Mix well.

Then, add fennel powder, chili powder, salt and raisins to it. Mix well.

Now, Divide the mashed potatoes into six or eight portions, flatten them like patties. Fill them with paneer mix in the center and wrap it along so that the stuffing is well secured inside it. Then, deep-fry them in hot oil. Drained them on a tissue paper.

Now, add all the dry ingredients mentioned in other ingredients section in the puree. Mix well.

Heat two tablespoon oil in a pan and add all the whole spices mentioned in the other ingredients section. Sauté them for a minute.

Then, add tomato puree to it and fry them for few minutes till the oil starts leaving the pan.

Make a smooth paste of almond, cashew nuts, and melon with some milk and add it to the puree and mix it well. Cook it for few minutes on low flame till the gravy thickens. Add some water if required at this stage.

Just before serving,dunk the potatoes kofta in the gravy, simmer for a minute or two and serve immediately.
