Ingredients

  1. For palak puri-
  2. 2 cupswheat flour
  3. 1 cuppalak puree
  4. 5-6garlic cloves
  5. 3-4green chillies
  6. 1-2 inchginger
  7. 1 tspturmeric powder
  8. 2 tspsalt
  9. 1 tspwhite til
  10. 1 tsproasted jeera
  11. 2-3 tspoil for moin
  12. as requiredOil for frying
  13. Fortariwale aloo
  14. 4-5potatoes
  15. 3tomatoes
  16. 5-6green chillies
  17. 1/2 tsphing
  18. 2 tspoil
  19. 2 tspdhaniya jeera powder
  20. 1 tspturmeric powder
  21. 1 tspred chilly powder
  22. 2 tspkashmiri red chilly powder
  23. 2 tspsalt
  24. 1/2 tspkasuri methi powder
  25. 1/4 tspaamchur powder
  26. 1-2 tspjaggery (optional)
  27. 1 tspmustard seed
  28. 1 tbspcoriander leaves
  29. Few ginger juliennes
  30. Forkasuri methi sukha aloo
  31. 4-5potatoes
  32. 1/2 tsphing
  33. 2-3 tspoil
  34. 4-5green chillies
  35. 2-3 tspkasuri methi powder
  36. 1 tspturmeric powder
  37. 1 tspred chilly powder
  38. 2-3 tspdhaniya jeera powder
  39. 1 tspcoriander leaves
  40. as requiredOnions, tomatoes, curd and green chillies

Steps

  1. 1

    Wash the palak leaves. Make a puree by grinding palak, green chillies, ginger and garlic to a smooth paste. Add water as reqd. Now take wheat flour, add the palak puree and remaining ingredients and knead a semi soft dough. Allow it to rest for 1/2 hr.

    Boil the potatoes. Peel and chop the potatoes. Now in a kadai heat oil, add mustard seed, hing, green chillies and tomatoes. Cover and cook until soft. Add the spices, mix well. Add the potatoes. Smash some of the potatoes. Add water, jaggery. Cover and cook till all mixed well. Now add kasuri methi powder and mix again. Garnish with coriander leaves.

    In another wok, heat oil, add hing, green chillies and dry spices. Now give a nice mix. Add the potatoes, allow it to be little crispy. Remove in a serving plate and garnish with kasuri methi powder and coriander leaves

    To make the Puri's. Heat oil, in a kadai, make small balls and roll it and fry it.

    Serve hot hot immediately and enjoy ❤
