I've been using meat miso sauce on deep fried eggplant for some time, but I revised my standard recipe recently to add more sake and ginger, which makes it even more delicious.

Put a small amount of oil in a pan and stir fry the ground pork over medium heat until crumbly. Add the [A] ingredients and simmer it down.

Simmer over low-medium heat, until the sauce is sticky and shiny, and it's done.

Used as a topping on deep fried eggplant. The sauce has a sweet flavor so to stop with shredded shiso leaves. The shiso and meat-miso sauce go perfectly together.

Deep fried zucchini slices topped with the meat miso sauce and shredded shiso leaves.

The sauce goes well with raw cucumber too. Please give it a try.
