Rich Cheesecake

I used to use a blender to make cheesecake. However, when I changed to using a hand mixer, the amount of batter was too much. I wanted to be able to make cheesecake with a hand mixer that had the same flavor.
You can use a blender to mix. Put all the ingredients into the blender for 2 minutes. The batter may overflow, so it's better to pour only 70% full. Recipe by jun jun
Rich Cheesecake

Measure the ingredients. Line the cake mold with parchment sheet. Bring the cream cheese to room temperature. Preheat the oven at 170°C.

I used this type of biscuit.

While melting the butter in the microwave, break the biscuits up in a double-layered plastic bag.

Mix the butter and biscuits.

Line the bottom of the mold with biscuits.

Put the cream cheese and sugar into a bowl and mix with an electric mixer.

Add the eggs one by one. Mix well each time.

Add the heavy cream and mix.

Add the lemon juice.

Add the flour. After the flour is mixed in, keep mixing for about 2 minutes with the electric mixer.

Pour the batter into the mold. Drop it (pound it) several times to eliminate air bubbles in the batter. Bake for about 40 minutes at 170°C. Poke a bamboo skewer into the batter to see if it is cooked. If there is some batter on the skewer, bake for another 5 minutes.

This is just after baking It's puffed up, but gradually it goes down and concentrates the flavor.

This is the one egg version. I used 15cm and 12cm round molds.

The baked cake looks like this. The biscuit bottom looks like it's too much, but it will enrich the cake.

If you use 2 eggs, the batter turns into a yellow-like color. It's rich, but has a fluffy texture.

If you use just 1 egg, it is really rich. Try whichever you like.
