It's hot and humid so I want to eat something refreshing. I used umeboshi because it has anti-microbial qualities.
Spread the umeboshi over the inside of the opened chicken. Sandwich some shiso leaves between the pieces if you have any.

Cooking Instructions

Slice the chicken diagonally so it is half the thickness, and open up. Remove the seed from the umemoshi, mince it, and spread it on the chicken.

Fold the chicken back to its original shape. Season well with salt.

Thinly coat a frying pan with oil, and cook, skin side down, until it starts to brown.

Turn it over and add some sake. Put the lid on, and let it cook through.
