Healthy Sausages with Crushed Potatoes and Creamy Peas

With almost a year of Lockdown we let ourselves go slightly by eating unhealthy and unbalanced meals which has now started to take it's toll on our bodies. Add a new baby to the mix and a cranky toddler that doesn't understand why he's unable to enjoy the outdoor freedoms he once had means we've inevitably put on a few pounds.

We now need to get back into shape as summertime is fast approaching after all. Using recipes from different diets we are now eating healthy at home.

This is a weightwatchers recipe, I followed the recipe exactly, my partner loved the sauce but said he was still hungry (he eats big portions) so decided to do himself 2 hot dog wraps with pickles and Mustard after so not the healthiest combo for him. 🙄

Ingredients

4 servings
  1. 600 gbaby new potatoes
  2. 2 tbspfresh mint, finely chopped
  3. 8Reduced Fat Sausages
  4. Salt to taste
  5. Black pepper to taste
  6. 100 greduced fat soft cheese
  7. 220 gfrozen peas
  8. 130 mlvegetable stock
  9. 2spring onions, sliced (3 if they are small)
  10. Zest and juice from half a small lemon

Steps

  1. 1

    Bring a pot of water to boiling point and boil the potatoes whole until soft and cooked through. I kept the skins on but that's optional.

  2. 2

    While the potatoes are boiling cook the sausages in oven according to instructions. I air fried my sausages at 200c for 8 minutes.

  3. 3

    Spray a saucepan with fry lite, fry the spring onions for 1-2 minutes, then add the peas and stock. Cook for 5 minutes with lid uncovered stirring occasionally.

    Stir in the cheese until melted. Remove from the heat.

  5. 5

    Drain the potatoes well and using a potato masher, mash the potatoes roughly. Add the mint, lemon zest and juice. Combine it all together.

  6. 6

    To serve, top the potatoes with the creamy peas and sausages on the side.
