White Fish Baked in Mayonnaise and Panko

I wanted to easily make a restaurant-style without much preparation time.

The fish is thick, so if it appears to be half-baked, cover with aluminum foil and bake again. (Covering the fish with aluminum foil will keep the bread crumbs from burning.) Recipe by Umemikkii

What other ingredients might substitute for Sake? I can't get Sake here I think, but there may be other things I could get (vinegar or wine maybe). Ideas?
