Crispy Egg Cookies

I have been making these cookies for a long time.

You don't need to sift the cake flour, but if you're using cocoa powder, sift them together.
Cookies taste better when you rest the dough, but if you don't have time, omit the step.
You can make cookies even with 1 beaten egg. Using only egg yolks makes the cookies more moist. Recipe by Shihosuke

30 servings
  1. 1・・・130 grams Cake flour
  2. 1・・・50 grams Butter (salted or unsalted)
  3. 1・・・50 grams Sugar
  4. 1・・・2 tablespoons Beaten eggs (egg yolks)

Steps

    Soften the butter in a bowl, then add sugar and cream.

    Pour the beaten eggs in 2 ~ 3 batches, and whisk well until the mixture becomes smooth.

    Add cake flour, and fold in with a spatula.

    Wrap with plastic wrap, and let it rest in the fridge for 1 hour.

    When the dough has come together, cut out shapes with your favourite cookie cutters. In the meantime, preheat the oven for 180℃ / 350℉.

    Bake for 15 minutes at 180℃ / 350℉.

    Bonus tip When you are making a chocolate version, change the amount of the cake flour to 110 g, and add 10 g of cocoa powder.
