Ingredients

3 people
  • 400 gwhole grain short pasta or gnocchi
  • 500 gmushrooms (sliced)
  • 1onion (chopped)
  • 3 clovesgarlic (crushed)
  • 4 tbflour (sifted)
  • 400 mlcoconut milk
  • 1,5ts mustard
  • Stock
  • 200 mlwater
  • 1vegetable boullion cube
  • 2laurel bay leaves
  • 8big basil leaves (chopped)
  • 0,5ts dried oregano
  • 0,5ts thyme
  • 1 dashblack pepper
  • To taste
  • 1 dashsalt

Steps

  1. 1

    Combine stock ingredients in saucepan and boil on med-high until reduced to 100 ml left, then remove bay leaves

  2. 2

    Start boiling the pasta

  3. 3

    On med-high heat fry onion until translucent.

  4. 4

    Add garlic and fry until golden

  5. 5

    Add mushrooms and fry until mushrooms are soft and have released their liquid

  6. 6

    Add sifted flour and mix well

  7. 7

    Add coconut milk, stock and mustard
