Some small modifications from the Mediterranean dish recipe online. More garlic, a little less meat, and a little less pasta, and a little time for the flavors to marinate. Yum.

Some small modifications from the Mediterranean dish recipe online. More garlic, a little less meat, and a little less pasta, and a little time for the flavors to marinate. Yum.
Cooking Instructions

Line a baking sheet with foil and lightly oil it with olive oil

Mix all meatball ingredients by hand until combined.

Form 1 inch meatballs and space evenly on the baking sheet. Broil on high for 6 minutes. Remove from oven and set aside.

Heat oil in a large pot

Add chopped vegetables and minced garlic and cook on med-high heat for 5 minutes, stirring occasionally.

Add broth, tomatoes, and spices. Cook on med-high heat for 10 minutes.

Stir in meatballs and pasta. Cook for 10 minutes.

Turn off heat, remove from stovetop, cover and let sit for 15-30 minutes.

Serve with chopped parsley

This would have been great with carrot, onion, and celery sautéed with the garlic but I didn’t have any and I’m stuck in the house!I pulled a pack of meat out of the freezer that said it was “hamburger meat” (venison) but it turned out to be sausage (no clue what spices were in it) which was great!
