Ingredients

  1. Meatballs
  2. 1 lbground beef
  3. 1/4 cupbreadcrumbs
  4. 3med-large cloves garlic, minced
  5. 1/2 cupgrated Parmesan
  6. 2 tsporegano
  7. 1/2 tsppaprika
  8. 1/4 cupchopped parsley
  9. 1raw egg
  10. Salt and pepper
  11. 1 tbspOlive oil
  12. Soup
  13. 2 tbspolive oil
  14. 2celery stalks, chopped
  15. 2large carrots, chopped
  16. 1medium onion, chopped
  17. 1bell pepper (any color), chopped
  18. 2 clovesgarlic, minced
  19. 5 1/2 cupsbeef broth
  20. 2 (14 oz)cans diced tomatoes with juices
  21. 1 Tsporegano
  22. 1 tsppaprika
  23. Salt and pepper
  24. 1/2 cupmacaroni or other smallish noodle (optional)
  25. 1/2 cupchopped parsley

Cooking Instructions

    Line a baking sheet with foil and lightly oil it with olive oil

    Mix all meatball ingredients by hand until combined.

    Form 1 inch meatballs and space evenly on the baking sheet. Broil on high for 6 minutes. Remove from oven and set aside.

    Heat oil in a large pot

    Add chopped vegetables and minced garlic and cook on med-high heat for 5 minutes, stirring occasionally.

    Add broth, tomatoes, and spices. Cook on med-high heat for 10 minutes.

    Stir in meatballs and pasta. Cook for 10 minutes.

    Turn off heat, remove from stovetop, cover and let sit for 15-30 minutes.

    Serve with chopped parsley
