1/ Thinly slice the lettuce, mix with herbs, and julienne the cucumber.
2/ For the sweet and sour fish sauce: mix 2 parts fish sauce, 1 part sugar, 1 part water, 1/2 part lime juice, and add pickled carrots. After mixing, top with minced garlic and chili.
3/ Roast the peanuts, prepare scallion oil, and fry the shallots.
