Wash, trim and chop the leeks into bite sized pieces. Simmer fir 5 minutes to soften. Add a little salt to flavour. Drain.

Make the vegan cheese sauce by melting the butter, storing in the flour, add the milk a little at a time and simmer until thickened. Add the mustard powder and half of the nutritional yeast.

Transfer leeks to a baking dish. Top with cheese sauce, to with breadcrumbs mixed with nutritional yeast.

Bake in a medium oven for around 25 minutes until golden. Tip with fresh chopped herbs.
