Ingredients

35 minutes

  • 2Ieeks
  • 1 tablespoonvegan butter
  • 1 tablespoonplain flour
  • 1 cupoat milk
  • 1 teaspoonmustard (powder works well)
  • 3 tablespoonsbreadcrumbs
  • 1 tablespoon nutritional yeast
  • Salt and pepper
  • Chopped fresh herbs 🌿

Steps

35 minutes
  1. 1

    Wash, trim and chop the leeks into bite sized pieces. Simmer fir 5 minutes to soften. Add a little salt to flavour. Drain.

    Make the vegan cheese sauce by melting the butter, storing in the flour, add the milk a little at a time and simmer until thickened. Add the mustard powder and half of the nutritional yeast.

    Transfer leeks to a baking dish. Top with cheese sauce, to with breadcrumbs mixed with nutritional yeast.

    Bake in a medium oven for around 25 minutes until golden. Tip with fresh chopped herbs.

Tips

Homemade Breadcrumbs

Breadcrumbs are the perfect way to use up bread that is just past it’s best. Day old sourdough may not be perfect for sandwiches, but it’s just right for crumbing! I add these to Gazpacho, nut loaf, homemade plant sausage and burgers but these ones are destined for my infamous homemade sage and onion stuffing! I’m making extra to fulfil requests! 😊#zerowaste
