Rinse the broccoli well with water. Chop off the stem, then break the floret into smaller bunches. Peel the hard parts of the stem to chop into smaller pieces.

Heat some water in a pot. Add salt and bring it to a boil. Start with adding the broccoli stems. After about 20 seconds, add the rest of the broccoli. Cook for 1-2 minutes and drain in a sieve.

Fan the broccoli. This makes the broccoli retain its beautiful green color as well as preventing it from softening.
