Please refer to "Direct From a Former Hamburger Chef: Tofu Hamburger Patties". Toss the patties back and forth like playing catch to remove the air.

Here are the hamburger patties with shiso leaves

Start frying them!! Heat oil in a frying pan, and pan-fry for 3 minutes over medium heat. Please make an indentation in the middle with your fingers! That helps them cook through faster!

Flip after 3 minutes! They should be nicely browned!

Cover with a lid and steam-fry for 3 minutes! Flip after 3 minutes, and fry for another 3 minutes over low heat. Flip again after 3 minutes!

Turn up the heat to high, and flambé with the sake!

Cover with the lid and steam-fry!

If you are worried whether they are cooked though or not, add water and steam-fry some more! And you're done! You'll be amazed how soft they are!!
