I’ve gone down a savoury pancake route this Pancake Day. I love chickpea flour and it combines beautifully with Indian spices.

I’ve gone down a savoury pancake route this Pancake Day. I love chickpea flour and it combines beautifully with Indian spices.

The day before you make the pancake (if you can), mix together the gram flour, water and olive oil. Leave to sit at room temperature.

The next day the batter will have formed a bit of a skin. Whisk it back together with the coriander and salt.

In a small frying pan, dry fry the cumin seeds over a medium heat for a few minutes. Then add a little olive oil and pour your batter into the pan.

Keep it over a low to medium hob and pop a lid on the pan. Cook gently until the batter is set (this should take only five mins or so).

I like to eat this on its own but you could also have it with dips, salad, soup or curry.
