A quick and easy variant of cheese on toast for a light lunch with minimal washing up!

Bring the oil and butter to a medium-high heat in a frying pan and fry the leek for 2 minutes, then add the mushroom and garlic and continue frying for a further 4 minutes, occasionally stirring gently, or until the vegetables are softened but not burnt.

Meanwhile toast the bread.

Spread the Stilton over the toast and then smear 1 tsp of cranberry sauce on each slice.

Top with the leek and garlic and enjoy!
