Cranberry Pistachio Cookies
These soft, buttery, flavourful cookies are so good that you can't just have one. Cranberries and pistachio give these cookies a beautiful contrast of textures and butter makes it so soft and flavourful. Mix flour and cold butter until it looks like breadcrumbs.

Add sugar to the mixture and mix it well. Now add chopped cranberry and pistachio to it and give it a good mix.

Now add cold water to it and make a dough. Take the dough out on a work surface and shape it into a log. Now cover the log with the cling film and keep it in the freezer for two hours.

After 2 hours, remove the log from the freezer section and discard the cling film. Now cut the log into 24 cookies. Place the cookies on a greased baking tray.

Bake the cookies in a preheated oven at 180 degree for 15 minutes. Check if they are baked properly. You can take them out if ready or you can leave in the oven for couple of more minutes. Transfer them on a wire Rack and let them cool completely. Baking time differs slightly in different types of ovens.

Serve cranberry pistachio cookies as a tea time snack.
