Cauliflower which is also called Fulkobi, is a favourite in Maharashtrian cuisine and it is prepared in many different ways. In my recipe, I have used the Maharashtrian goda masala along with a bit of jaggery to give it a unique taste and flavour. It is best eaten with hot fulkas or bhaat.( Rice). Simply delicious and nutritious too! Enjoy.

First, wash the cauliflower well. Separate the florets and keep them immersed in hot water. Add 1 tsp salt and turmeric powder, cover and keep for 10 minutes. Then drain and keep aside.

Then heat half of the oil in a kadhai. Add the onions and fry well. Then add the Ginger, garlic, chillies and saute' well till soft. Then add tomatoes. Fry well. Add 1-2 tablespoon water and cook till soft and mashed.

Then cool this mixture and grind to a smooth paste. Again heat the remaining oil in the kadhai. Then add Mustard seeds, cumin seeds, curry leaves, asafoetida and saute' well. Then add the cauliflower florets, carrot cubes and capsicum cubes, stir well.

Then add all the spices, salt to taste and mix well. Then add a small chopped tomato and mix well. Add 4 tablespoons hot water and mix well. Cook covered till cauliflower, carrots, capsicum and tomatoes are soft but not broken. Then add the pre boiled green peas and mix.

Then add the prepared gravy and mix well Adjust the spices and thickness as per taste and preferance. Add jaggery and combine well. Let it simmer for 2 minutes.

Lastly, add the goda masala and combine. Switch off flame, add lemon juice, 1tsp ghee for added taste and mix gently. Serve piping hot with fulka, rice or bread! Enjoy!
