Steps

First prepare and remove all the required ingredients.wash chicken and divide into 4 parts.Now heat oil into a large vessel. Now fry the chicken with 1 tsp salt for few minutes.

Now remove the chicken pieces. In same oil add in the onion with cardamom,bay leaves and cinnamon stick. Sauté few minutes then add in ginger,garlic and chilli paste

Now add in tomatoes,1 pack of chicken stock or cube of any brand with turmeric and mix well.

Now add in chilli powder,Machboos masala with dry black lemon. Mix well and sauté

Now add in chicken pieces and saute few minutes,now add 2 cups of water,mix well,cover the lid and let it simmer on medium flame for few minutes till chicken is tender. When done remove the chicken pieces then add rice to the stock with saffron water. Add more water and salt if required

For grill chicken,take a bowl with oil,Machboos masala,red chilli powder, salt,ginger garlic and chilli paste with a pinch of orange colour. Mix well and apply to chicken and grill them 180° FOR 15 mins.

For chutney/sauce. Grind tomato,coriander leaves,garlic,vinegar,green chillies and tomato paste.Heat oil in a pan then again add in tomato paste with sweet paprika and saute few seconds then add in the grinded masala.cook till well combined and thick consistency. Lastly add salt.

Now the rice,grill chicken and sauce is ready to serve.cut some vegetables to decorate and fry some onions and raisins to garnish

Chicken machbous ready to enjoy.Its an Arabic dish and taste awesome.
