Ingredients

22 muffins
  1. 1 1/2 cupsoat bran (about 120 grams)
  2. 1 cupwhole milk (240 ml)
  3. 1 cupwhole wheat flour (about 120 grams)
  4. 2 teaspoonsbaking powder
  5. 1 1/2 teaspoonsground cinnamon
  6. 1/4 teaspoonground nutmeg
  7. 1/2 teaspoonsalt
  8. 1large egg
  9. 2 tablespoonscorn oil (or melted coconut oil)
  10. 1 1/2 teaspoonsvanilla extract
  11. 2 tablespoonsmolasses
  12. 2 tablespoonshoney
  13. 2 tablespoonsbrown sugar
  14. 1 1/2 cupsor 2-3 large carrots, grated (about 180 grams)
  15. 1/2 cupdried cranberries or raisins (about 60 grams)

    In a bowl, combine the oat bran and milk. Set aside.

    In another bowl, mix the whole wheat flour, baking powder, cinnamon, nutmeg, and salt.

    In a larger bowl, beat the egg with the oil. Add the vanilla, molasses, honey, brown sugar, grated carrots, and cranberries, and mix well.

    Add the oat bran mixture and the flour mixture to the wet ingredients, and stir until just combined.

    Line muffin tins with paper liners and fill each with about 1 1/2 tablespoons of batter.

    Bake at 365°F (180°C) for 10 to 15 minutes. Enjoy!
