I love this dish, it is definitely a favourite side dish of mine to have when going to a Japanese restaurant.

When I was on holiday in Japan I ate this and it was one of the best ones I had.

I have been craving this for a while now so I decided to learn how to make it, due to lockdown and not being able to get this. Its best eaten hot rather than ordering a take away.

I prefer mine plain with no added seafood or meat as toppings, but for family I will add sliced pork belly.

I hope you enjoy making and eating this as much as we do.

Ingredients

2 servings
  • For store bought batter:
  • 100 gOkonomiyaki flour
  • 100 mlwater
  • 1egg
  • 300 gfinely shredded or chopped cabbage
  • Homemade Okonomi batter:
  • 100 gplain flour
  • 1 teaspoondashi powder
  • 1/8 teaspoonbaking powder
  • 1/8salt
  • 100 mlwater
  • 1Egg
  • 300 gfinely shredded or chopped cabbage
  • Other ingredients:
  • 3-4Pork belly, finely sliced or bacon rashers (optional)
  • 2-3mushrooms, finely diced
  • Homemade Okonomiyaki sauce:
  • 1 tablespoonWorcestershire sauce
  • 2 tablespoonsKetchup
  • 1 teaspoonlight soy sauce or oyster sauce
  • 2 tablespoonssugar (caster or granulated)
  • Cooking the pancake:
  • 1 tablespoonvegetable oil per pancake (or any cooking oil of choice)
  • Toppings:
  • Okonomi sauce (homemade or store bought)
  • Japanese mayonnaise
  • Sprinkle Katsuobushi (dried bonito flakes, skip if vegetarian)
  • Aonori (dried green seaweed), optional
  • Pickled red ginger

Steps

    To make the batter, in a large mixing bowl, add the flour, salt, baking powder and dashi powder and mix all together using a whisk. Or use ready made batter and follow instructions.

    Add the water and mix all of the ingredients together until well combined and set aside. Tip: if you have time cover the batter and let it rest in the fridge for at least one hour. It helps to relax the gluten in the batter and let the flavours all combine together. In the meantime you can prepare the cabbage and okonomiyaki sauce.

    Wash and cut the cabbage in half. Ensure you discard of the core and then finely shred the cabbage leaves. Transfer into a bowl and set aside.

    Thinly slice the pork belly slices and then cut the pork belly slices or bacon rashers in half. Transfer onto a plate and set aside.

    To make the Okonomiyaki sauce (optional) in a small bowl add the sugar, oyster sauce or light soya suace, ketchup and Worcestershire sauce. Combine and mix all together until sugar has completely dissolved and set aside. Or use store bought sauce.

    Once the homemade batter has been in the fridge for 1 hour. Remove from fridge and add the egg. Mix well until egg has incorporated into the batter. Now add cabbage and gently fold in. Do not over mix the batter.

    Using either a frying pan or hot plate, add cooking oil over medium heat. Let the oil heat up, once hot enough then spoon in half of the Okonomi batter. Shape into a circular shape. Cook for about a minute and then add pork belly slices (optional) and fry for about 3 minutes covering with a lid. If no adding any meat, cook for about 4 minutes covered with a lid.

    Once the meat changes colour and the bottom has nicely browned, using two spatulas, carefully turn and flip over the pancake. Cover with a lid and cook for another 5 minutes. Then remove lid after 5 minutes and flip the pancake over 1 more time. Cook for a further 1-2 minutes uncovered, then transfer onto a serving plate.

    Then apply okonomiyaki sauce with a spoon or silicone pastry brush, add Japanese mayonnaise in zigzagging lines, sprinkle bonito flakes. Sprinkle dried green seaweed (aonori, optional) and pickled red ginger on top for garnish. Repeat from steps 7 with the remaining okonomiyaki batter.
