I recreated the sauce that I used to cook when I worked at a restaurant. The good thing about this is that you can make this with what you would already have at home.

The key is in reducing the sauce. You could also mince the garlic, but it would hold its shape even if you cook it through, giving the sauce a rougher texture. Recipe by Silvy1978

  • 1Onion
  • 1 cloveGarlic
  • 50 mlRed wine (white or sake would be okay)
  • 50 mlMirin
  • 2 tbspFruit juice (apple, orange, etc.)
  • 30 mlVinegar
  • 100 mlSoy sauce

    It's really easy to make it taste like the kind they serve at restaurants! Finely mince the onion. You could chop it up roughly, or alternatively, you could use a food processor. Grate the garlic.

    Put the red wine and the mirin in the pan...

    And let it come to a boil once.

    Put in the onion and the garlic.

    Let it come to a boil again as you mix.

    Add the apple juice (any fruit juice would do; if you don't have any, you can use a teaspoon of sugar).

    Add soy sauce and vinegar.

    When it comes to a boil again, turn the heat down to low and reduce.

    It should be done when the sauce has reduced by about half. You should check for the taste. The sauce is best served at room temperature or a bit warmer.
