One Pot Cajun Rice (with or without spice)

This recipe is so versatile a great one pot family mid week dinner!! I’m doing this recipe for my weekly Cook Along on BBC Radio Derby !

So this recipe has spices in it but not everyone likes spice, so I’m going to do three versions ...
First - this Cajun recipe with spices chicken and chorizo.
Second - lemon and herb one pot with Chicken and two sliced traditional sausages with herbs and a squeeze of a lemon.
Third - a portobello mushroom version 3 large mushroom sliced with spicy harrisa! 1 tbsp of harrisa !
All Cooked the same way!

Slice the chicken, place a large deep frying pan on the hob on a medium heat! Throw in the chicken turning regularly so it cooks on all sides and goes nice and golden.

Meanwhile slice the onion, throw that in the pan and stir.

Chop the chorizo and and garlic, throw that into and stir again.

Slice the red pepper and courgette too, add this to the pan, stirring well.

Add the herbs and spices and tinned tomatoes keep on frying well!

Stir well add the rice coating it with all the ingredients then add the stock. Make sure all the grains are covered then add a lid! Turn down the heat to a low to medium setting. Cook for approximately 30 - 40 minutes depending on when the grains are soft and the liquid is absorbed! About 10 minutes towards the end check it’s not burning!

If need be add a bit more water to it if it’s grainy but not much liquid!
