Fruit cake

Simple fruit cake topped with ice cream. The recipe makes 1kg #recipemarathon

Combine sugar and margarine in a bowl and beat together using a mixer or a whisk until light and fluffy. Add eggs one by one as you mix and vanilla essence.

Combine flour, baking powder and mixed spices into a bowl. Pour the flour mixture into the sugar - margarine mixture and mix together. Throw in the raisins and mix then pour the batter into your baking tin.

Bake at 180°C for 1 hour. Optional: prepare buttercream as your cake cools. Beat the margarine until light and add icing sugar gradually. Apply the buttercream onto the cake as you may wish.

Serve with ice cream for dessert or as a snack on a hot afternoon
