It’s insanely delicious and this recipe is inspired by my mom. It takes some time to cook but it doesn’t need any fancy ingredients. It’s mostly Enjoyed in winters with hot chapati or parathas. It’s soup is so refreshing and delicious. It’s cooked in pure ghee for its richness. And most importantly the name itself will make you crave for it.mutton roast defines that we will roast this mutton well before cooking it further with other ingredients. Lastly while we will cook until the ghee layer will be separated .it’s a sign it’s perfectly cooked and the consistency of roast must be medium thick. So don’t add more water.

Firstly take a heavy bottom wok add ghee set it on medium flame burner then add the washed and drained mutton now roast until all the mutton colour changes to dark brown keep stirring so that it won’t stick to the bottom.cook on medium flame burner.

Further add chopped tomatoes sauté until it’s soften next add chopped onions also sauté this until slightly golden then add ginger garlic paste, salt, turmeric powder

Once everything is roasted well then add 2 glasses of water cover it and cook for 15-20 minutes until mutton is tender and the gravy is cooked well.finally add Garam masala powder,black pepper powder because if we add this at the beginning the colour of the final dish will be almost black which is not appreciated and not good in presentation. As there’s a saying eat with your eyes first.Now add coriander leaves. Adjust the consistency accordingly for the soup.

Our deliciously awesome mutton roast is ready to serve with hot parathas or chapati.
