Heat oil in a kadhai add cumin seeds dry red chili and pinch of hing and let them splitters.

Add onion green chilli and ginger paste and cook it

Add red chili powder turmeric powder coriander powder and mix well.

Add tomatoes, mix well and cook it until tomatoes soften or leaves oil. Add salt and mix it.

Now add boiled potatoes. Cook for 3-4 minutes. Keep stirring to avoid the potato from sticking.

Add roasted kasuri methi and dry mango powder and mix it well.

Now add water as required to make gravy. Cook for another 5- 10 minutes. switch off the flame.

Garnish with chopped coriander leaves and serve hot with puri.
