I made this vegetarian spring roll dish for my family with what we had at home.

Peel the carrots and jicama, then shred them into thin strips. Sauté the leek until fragrant, then add the carrots and jicama and stir-fry until just cooked.

Slice the vegetarian sausage or tofu into long strips.

Blanch the brown rice vermicelli noodles until cooked, then drain well.

Wash the garlic chives and cut into suitable lengths.

Wash the fresh herbs and drain well.

Sauté the leek until fragrant, then add hoisin sauce and stir-fry. Add a little coconut milk, sugar, and salt to taste. When serving, top with pickled vegetables, crushed peanuts, and chopped chili peppers.

Lightly moisten one side of the brown rice paper wrapper with water to soften. Add herbs, stir-fried jicama and carrots, and noodles, then roll up. Add garlic chives at the end and finish rolling up the wrapper.

Repeat until all the ingredients are used.
