Breads and Stew are my all time favourites and today is St.Patrick’s Day so what better way to celebrate than make traditional Irish Stew & Irish Soda Bread.
I would like to thank Ms.Jibita Khanna for her Irish Soda Bread recipe which I tweaked and added egg.

For Irish Stew - smear the mutton pieces with all-purpose flour and set aside 10 mins.

In a large pan bring it to heat and add oil, add smeared mutton pieces and fry on low heat for 15 mins. Set aside.

In the same pan add the peeled and roughly cut potatoes, roughly cut onions, roughly cut carrots. Stir and add chopped celery sticks, and add the stock.

Keep it on low flame and add dry thyme, bay leaf, salt and black pepper and cook covered for 60 mins. Set aside. Stew is ready.

For Irish Soda Bread - in a big bowl add all-purpose flour, whole wheat flour, salt and baking soda. Mix.

Add cold butter and mix so that the flour crumbles.

In a big jar add buttermilk, egg and whisk well. Add 3/4 of this mix to the flour and mix well

No kneading is required for this bread and no yeast at all.

Pre heat the oven. In my case it was a karai for 30 mins.

Sprinkle flour on kitchen top and bring the dough to the flour. Smear with buttermilk wash. The sides should be 1.5” thick.

As Irish legend goes the bread needs to be blessed so make a cross sign with a knife. Make four small holes on four sides as fairies have to be released

Add oats on all the bread dough. Put in a Baking plate which is greased and floured too.

Place on the Pre heated oven or in my case karai and on medium heat cook until brown in colour. Approx 30 mins

Insert a toothpick to see the doneness. Set aside the bread. Tap the bottom to see whether it’s done. If there is a hollow sound, it’s down.

Plate and slice. Enjoy with the stew
