Steamed and Fried Soya Momos (Soybean Dumplings)

To make soya momos, first combine the all-purpose flour, salt, and water in a large bowl to form a soft dough. Cover and let it rest for about 30 minutes.

Boil the soy granules in water, then drain and set aside.

Heat 2-3 tablespoons of oil in a frying pan. Add the onion, cabbage, bell pepper, and ginger-garlic paste. Sauté well.

Add the boiled soy granules, salt, and black pepper powder. Mix thoroughly.

Transfer this mixture to a plate and let it cool.

Take a small portion of dough and roll it out. Place some of the soy filling in the center, then pinch the edges together to seal the momo. Make sure the top is sealed well so it doesn't open while cooking.

Repeat to make all the momos.

Bring water to a boil in a steamer or large pot. Grease a steel strainer or steaming tray with oil and arrange the momos on it, keeping some space between each.

Place the strainer or tray with the momos over the boiling water in the steamer or pot. Cover and steam on low heat for about 10-15 minutes.

Check the momos occasionally. Steam until the outer layer changes color and looks cooked.

Remove the lid and transfer the momos to a plate. Serve hot with momo chutney.

For frying: Heat oil in a deep pan. Add the momos to medium-hot oil (fry as many as fit comfortably at once). Fry on medium-low heat, turning occasionally, until golden brown on all sides. Once golden, lift the momos out and let excess oil drain back into the pan. Place on a plate. Repeat with the remaining momos.
