Easy 1-Pot Non-Fried Candied Sweet Potatoes

I love candied sweet potatoes but the labor put into them is disappointing. It's so much trouble to use oil... Omitting the oil and frying makes it easier to make. These are so good as a snack. I can eat half of these right up.

Work quickly from Step 5! This is because the sugar could harden. Also, use coarse salt or good tasting salt. After the initial sweetness, the lingering salty taste is really delicious. If you don't have starch water, you can substitute it with 2 heaping tablespoons of sugar. Recipe by Chako@hokkaido

Ingredients

1 serving
  1. 1Japanese sweet potato
  2. 3 tbspSugar
  3. 3 tbspMirin
  4. 2 tbspSake
  5. 1 tbspButter
  6. 2 pinchSalt
  7. 2 tbspOil
  8. 2 tbspMizuame starch syrup (or honey) (optional)

Steps

  1. 1

    Peel the skin of the sweet potato in stripes (or just leave it on).

    Chop into bite-sized pieces and soak quickly in water.

    Place in a heat-resistant container and microwave until softened! I cooked mine for 5 minutes.

    Heat oil in a frying pan and sear the potatoes from Step 3. Let sit for a short moment on medium heat, then jostle the pan to turn them over and repeat.

    From here, you need to work quickly. Once the potatoes in Step 4 have browned nicely, quickly pour in the mirin. Then, add the sugar and sake. Melt the butter for a finishing touch.

    Add the mizuame (or honey) and mix together. Once they have cooled, sprinkle sesame seeds and salt, and then they're finished!
