Ingredients

  1. 2 cupflour
  2. 2 tspbaking powder
  3. 1 1/2 tspbaking soda
  4. 2 tspground cinnamon
  5. 2 cupgranulated sugar
  6. 1 cupvegetable oil
  7. 4eggs
  8. 2 cupgrated carrots
  9. 8 ozcrushed pineapple, drained
  10. 1/2 cupchopped nuts (walnuts)
  11. 8 ozcream cheese
  12. 1/2 cupbutter or margarine
  13. 3 1/2 cupicing sugar
  14. 2 tspvanilla

  1. 1

    1. Sift flour; add baking powder, baking soda and cinnamon.

  2. 2

    Add sugar and oil and beat until fluffy and creamy

  3. 3

    Add eggs one at a time, beating well between additions

  4. 4

    Add pineapple, carrots and nuts

  5. 5

    Pour into a greased and floured 9" round cake pan

  6. 6

    Bake in a preheated oven at 350°F for 40-45 minutes or until tester comes out clean. cool completely.

  7. 7

    Combine cream cheese, butter, icing sugar and vanilla and mix well

  8. 8

    Split cake in half ; fill and frost
