Warm the milk, dissolve the yeast in it, and add the sugar.

Combine the flours, olive oil, and finally the salt. Mix everything together in a bowl to form a dough.

Cover and let the dough rise in a warm place for 3 hours.

Take small pieces from the dough and shape them into mini pizzas with your fingers—they don’t have to be perfectly round.

Top with tomato sauce, a pinch of salt, and a drizzle of olive oil. Bake at 350°F (convection) for 15 minutes, then add pieces of mozzarella and bake for another 5 minutes. Serve hot.
