Delicious Mini Pizzas

These mini pizzas started from a basic recipe, but since they’ve become the go-to appetizer every evening, they’re now the result of a dough that’s refreshed each time by taking a piece from the previous batch and adding more flour, water, sugar, and salt—almost like a sourdough starter. It’s an endless but super convenient cycle, especially when fresh yeast is hard to find.

Steps
- 1
Warm the milk, dissolve the yeast in it, and add the sugar.
- 2
Combine the flours, olive oil, and finally the salt. Mix everything together in a bowl to form a dough.
- 3
Cover and let the dough rise in a warm place for 3 hours.
- 4
Take small pieces from the dough and shape them into mini pizzas with your fingers—they don’t have to be perfectly round.
- 5
Top with tomato sauce, a pinch of salt, and a drizzle of olive oil. Bake at 350°F (convection) for 15 minutes, then add pieces of mozzarella and bake for another 5 minutes. Serve hot.
