Ingredients

Makes 15 pieces
  1. 2 1/2 cupsall-purpose flour (about 300 grams)
  2. 1 2/3 cupswhole wheat flour (about 200 grams)
  3. 1 cupmilk (about 250 grams)
  4. 3 1/2 tablespoonsextra virgin olive oil (about 50 grams)
  5. 1 tablespoonsugar, leveled
  6. 1heaping teaspoon salt
  7. 1/4 ounceactive dry yeast (about 7 grams)
  8. Toppings
  9. Tomato sauce
  10. Mozzarella cheese

Steps

  1. 1

    Warm the milk, dissolve the yeast in it, and add the sugar.

  2. 2

    Combine the flours, olive oil, and finally the salt. Mix everything together in a bowl to form a dough.

    Cover and let the dough rise in a warm place for 3 hours.

  4. 4

    Take small pieces from the dough and shape them into mini pizzas with your fingers—they don’t have to be perfectly round.

    Top with tomato sauce, a pinch of salt, and a drizzle of olive oil. Bake at 350°F (convection) for 15 minutes, then add pieces of mozzarella and bake for another 5 minutes. Serve hot.
