This is one of my favorite sides. You can use blackeye peas, and add a fresh diced tomato instead, also. Both are good. But I love the English peas best. And I've never really liked English peas that much, but in this it's amazing! Also u can barely taste the mayo, so it works great!

Ingredients

4-6 Servings
  1. 2 cansorganic English peas or black eye peas
  2. 1/2-1diced small uncooked yellow onion or as needed
  3. 2-3 As neededdiced small boiled eggs
  4. As neededlight mayo I use hellmans because it isn't strong or tart tasting
  5. 1 tspoptional hidden valley ranch powder
  6. Seasonings: garlic powder, onion powder, salt,pepper oregano
  7. As neededCooked chopped bacon
  8. As neededsmall diced fresh tomato optional

Steps

  1. 1

    Toss the bacon in oven to cook while you Boil eggs. Then cool, peel and Dice eggs, bacon and veggies(onions, tomato)

  2. 2

    Pour cans of peas in a pot on stove and let cook(warm up) on low, then simmer. Don't overcook or they will turn mushy when u mix up with everything. It doesn't take but a minute. You really just want to heat/warm them up.

  3. 3

    Tilt & Drain all the liquid in peas from pot, except leave just a tid bit of the liquid so it can mix easily with the mayo, and seasonings

  4. 4

    In a mixing bowl, add mayo, ranch seasoning, stir, add peas and the little bit liquid from them, add diced veggies(minced garlic/onions/tomatoes & diced boiled eggs, chopped bacon, seasonings(s&p, garlic/onion powder, etc. and flip stir with a spatula and softly toss mix together, until fully combined. Sprinkle oregano over it, & scatter a lil more chopped bacon if you want.
