My onions were so soft that I wanted to eat the whole thing.

Peel the onions and remove the stem and root.

Lightly boil the green beans.

Cook the chicken and cooking sake in a pot while breaking the meat into small pieces. Continue cooking until the chicken changes color.

Add the sweet onions, dashi stock, and soy sauce. Simmer while skimming the scum.

Once the broth begins to boil, cover with a lid and simmer over low heat for 30 minutes.

Transfer the onions and green beans to a plate.

Dissolve the katakuriko in a small amount of water to prepare a slurry, then add it to the simmering broth to thicken.

Top the sweet onions and green beans with the sauce from Step 7 to finish.
