Steps

Remove bone from sardine and break it into small pieces. Set aside. (keep the sardine sauce)

Heat oil in a pan. Add onion, saute until onion turn translucent add tomato. Saute for 3 mins.

Add chilli and curry leaves. Do a quick stir and add ginger garlic paste. Saute until raw smell disappear.

Add chilli paste. Cook until oil separate. Add water and sardine sauce. Mix well, cook for 3 mins.

Add sardine pieces and salt. Cook further until oil breaks. Adjust consistency according to your preference (if you want the sambal to be thick cook further for 2 mins)
