Thandai

Thandai is traditional Indian cold drink which is very refreshing and has cooling effects that is why the name "thandai" meaning "cooling". It is prepared with combination of nuts, spices, saffron and rose petals. Traditionally everything is soaked together and then ground into a paste. Then milk and powdered sugar is added to it. This drink is enjoyed the best when it is chilled.
Even instant thandai powder can be prepared buy roasting all the nuts n spices together then making a powder out of it. But soaking and grinding method gives much more flavour and taste to the drink.
This drink is usually prepared during the festivals of Holi and Mahashivratri. It is very popular in the Northern part of India. This is a best cooling drink during summers.

Prepare all the nuts and spices and soak them in one cup of water for 5 to 6 hours. You can even soak them in hot water for a couple of hours if you are in a hurry. You can even dry roast all the nuts and spices on low heat and cool it down then grind it to a powder. This powder also can be used to make thandai but the flavor and the taste from the soaking and grinding method is much better than the instant powder method.

Now grind all the spices along with the water in a mixer jar and make a smooth paste. Add 2 - 3 of paste in a glass along with 1 tbsp of powdered sugar. You can adjust the amount of thandai paste and sugar according to your liking. Now pour chilled milk over it. Mix everything well.

Serve thandai chilled along with few ice cubes. Garnish it with pistachio slivers, dry rose petals, and fresh rose petals.
